Structured sensory training
A repeatable, checkable process from appearance through aroma to structure — rather than reliance on instinct.
A sommelier is not measured by how many appellations they can recall, but by whether they can reason from the evidence in the glass and turn that reasoning into something a guest can actually use.

Every part of the programme is built around one question: will a student keep improving after they leave the room. Lists go out of date. Method does not.
The emphasis is on systematic tasting, comparative practice, and judgement exercised on the floor. Students are asked to explain how they reached a conclusion, not merely to produce one.

Service sequence, glassware handling and the rhythm of a conversation, all practised under genuine pressure.

Menu structure, cost and stock turnover — understanding where beverage sits in the operation of a restaurant.

A classroom builds vocabulary; the floor is where judgement is learned. Students practise inside a real service rhythm, handling last-minute changes, unfamiliar bottles, and decisions that cannot wait.
The point is to let mistakes happen somewhere they can be discussed, rather than after graduation.
Whether a student is still improving three years later matters more than how much they knew on the day of the final assessment.
No. The programme begins with foundational sensory training, while offering advanced practical work for students who already have floor experience.
Assessment centres on blind analysis and live service, and asks students to explain their reasoning. Pure recall carries very little weight.
Teaching is in Chinese, while students are expected to become fluent in English terminology for regions, varieties and technique, since international settings still default to English.
