How the programme works

From sensory foundations to the service floor, the programme runs in three connected stages.

Table service practice
Three stages

Sequential, not accelerated

Sensory training session
Stage one

Senses and vocabulary

Establishing a shared descriptive language and a repeatable tasting sequence.

Table service practice
Stage two

Comparison and inference

Using comparative flights to separate styles, and reasoning from evidence toward origin, variety and process.

Cellar and stock management
Stage three

Service and decisions

Handling pairing, cost and live contingencies inside a real service rhythm.

How students are assessed

Assessment has three parts: blind analysis, live service, and a spoken explanation. The weighting deliberately departs from a written-examination model.

  • Blind analysis
  • Live service execution
  • Spoken reasoning
